The final release in our Adelaide Festival Gin trilogy, this 2026 collaboration is a celebration of arts and culture in all their forms, and of the vital role they play in shaping Australia’s creative landscape. Adelaide Festival Artistic Director Matthew Lutton OAM describes it as “a gin full of surprises, creativity, and flavours you don’t get to experience at other times of the year” — a sentiment that sits at the heart of this limited, expressive release.

Makrut lime leaf brings bright, aromatic citrus, followed by roasted pineapple steeped for three days for depth and subtle sweetness. Juniper anchors the palate, while kombu and black tea add a dry, savoury backbone with gentle umami. Jasmine and shiso lift the palate, with coriander seed, galangal and Sichuan pepper delivering warmth and edge through the finish.

Citrus-forward and savoury, this is a gin built for long drinks — served over ice with tonic or soda, finished with a green, aromatic garnish.

Cocktails

HOLY BRAMBLE

INGREDIENTS
60ml Prohibition Adelaide Festival Gin
22.5ml Lime juice
15ml Sugar syrup
Bar spoon of blackcurrant jam (or any fruit jam)
3 leaves of Holy Basil (ripped)

METHOD
1. Add all ingredients to a shaker with ice.
2. Shake vigorously and strain into a glass filled with crushed ice.
3. Garnish with basil.
