Makrut Lime & Pineapple Gin

Bright, savoury, and unapologetically bold.

Makrut lime leaf brings bright, aromatic citrus, followed by roasted pineapple - steeped for 3 days. Juniper keeps it firmly in gin territory, while kombu and black tea lend a subtle savoury backbone, with lashings of umami, keeping everything dry and structured.

Jasmine and shiso lift the palate, coriander seed and galangal add warmth, and sichuan pepper delivers a bit of edge on the finish.

The result is citrus-forward, savoury, and process-wise, more than slightly unconventional — built for long drinks with ice, tonic or soda, and a green, aromatic garnish. Limited. Deliberate. Very drinkable.
